From Wildwood’s Soy Sisters


Wildwood Corn & Tofu Chowder with Fennel
Serves 16

2 Tbsp. butter
1 lb Wildwood Organic Medium Tofu, cubed
1 zucchini, chopped
2 leeks, chopped
4 c. corn kernels (drain if canned)
4, 14 oz. cans vegetable broth
2 c. Wildwood Organic Plain SOYmilk
½ to 1 c. cooked rice
Grated Parmesan cheese for garnish
Fennel seed for garnish


Melt butter, and add all ingredients except soymilk.
Simmer 10 minutes.
Add soymilk and heat until warm.
Garnish individual bowls with grated Parmesan cheese and fennel seed.
