From Wildwood’s Soy Sisters

Wildwood Greek Tofu Salad
Serves 6

1 lb. Wildwood Organic Firm Tofu
1 c water
¼ c. soy sauce
2 medium cucumbers
1 ¼ c. feta cheese, crumbled
2/3 c. sliced black olives
½ c. chopped fresh parsley

Press tofu, slice ¼” thick, and freeze slices.
When ready to assemble, combine water and soy sauce.
Defrost tofu slices and marinate for 10 minutes in water-soy sauce mixture.
Transfer slices to a greased baking sheet and bake at 400 degrees for 30 minutes, turning once.
Peel, seed and chop cucumbers.
Tear cooled tofu pieces into bite-size chunks.
In a medium bowl, toss tofu, cucumber, crumbled feta cheese, sliced olives and parsley.


1 c. Wildwood Organic Garlic Aioli
2 c. Wildwood Pleasantly Plain SOYogurt
1 Tbsp. oregano (or to taste)

 In a bowl, combine all ingredients.
Pour over the salad and toss to coat.
Serve on bed of lettuce, in pita bread, or as a sandwich with lettuce and tomatoes.
